Argentina Cowboys - The Gauchos
Like the cowboy was and is an integral part of western North America, so the Gaucho remains an integral part of Argentine Patagonia. These vast expanses of flat land in the southern cone of South America, lends itself perfectly to breeding and raising huge herds of cattle and sheep. Hundreds of thousands of livestock, sources of meat and Leather should be monitored and moved from place to place as the seasons dictate.
There are several theories about the origins of the word "Gaucho" but the fact remains that he noted the Argentine version of a cowboy for at least two hundred years. The Gauchos, like their North American counterpart, Cowboy, are a tough breed, used for long days in the saddle and live at least part of the earth. Indeed, it is from their habit of beef and lamb roasting on an open fire, that the tradition of Argentine asado is a barbecue on a scale large enough. Because of their ancestry mixed, the gaucho trend of mixing characteristics of both Native Americans and blacks, immigrants and the poorest flocked to the New World from Spain after the conquest.
The simple lifestyle of the gaucho of Argentina has given rise to various highly regarded culinary traditions, such as asado, to which people actually construct septic special to be able whole roast lamb on a huge bonfire without having to worry about their house caught fire. Chimichurri also comes from the gaucho, a sauce spicy very popular as an accompaniment to your asado.
Guachos have not always had the best reputations. Because they had to travel light, just themselves and their horses, they have also developed a reputation for theft and therefore became very unpopular.
However, when the colonies began to rebel against Spanish rule, the guacho come into his own. Used to spending long periods of time in the saddle, having developed an excellent rider and used to fend for itself, often alone with hundreds of thousands of cows, the Gauchos were strong and courageous in battle and showed themselves again and again against the Spaniards.
The original gauchos were easily recognized by his baggy pants, an import from Europe, especially Turkey, a long curved knife or Facon, his horse and his bolas, three balls hard leather bound with leather straps which he used to kill runaways or animals during the hunt. Often, these are his only possessions with them, he has forged a hard life on the vast plains of the pampas of Patagonia. As was often the case with the cowboys in North America, the gaucho has developed a reputation for toughness, a sense of justice and courage, all qualities very important when the majority of your life spent miles from any form of civilization and you must protect yourself and what you stand at any time, with only the most basic tools and your own strength of character.
After the Spaniards were expelled from the New World and when they become very popular once again among the general public for their conduct in battle, the gaucho has decreased and almost disappeared from sight altogether. However, since the vast herds of cattle remain by far the easiest and fastest way to get around the earth is mounted, the gaucho has returned and still exists today. It is unlikely to see in cities, but if you head to the pampas, particularly any ranch work or Ranch, you'll see in all its glory, usually astride a horse. Whether riding or not, it moves with your back straight and head held high, fully aware of its importance to the ranch and proud of his ability to do his job better than anyone.
